In 2013, Neil set out to answer a question no one was asking: could the Pacific Northwest produce maple syrup? Armed with an obscure university paper and decades of experience reading weather as a commercial fisherman, he spent years experimenting with bigleaf maple—a species long dismissed as a "junk tree." Through relentless trial and error, he cracked the code. Neil became the first WSDA-licensed commercial producer of bigleaf maple syrup, establishing the techniques and regulatory framework that sparked an entirely new industry. Today he's recognized as the pioneer of West Coast maple syrup.
